Farmers have bartered and sold goods as far back in history as agriculture itself. It is generally accepted that most farmers' markets stall holders must have grown, bred, caught, pickled, brewed or baked the goods themselves. Their main emphasis is to help local producers and processors to sell their goods direct to the public, near their source of origin, creating benefits to them, the environment and the local community. The selection of produce available at a Farmers' Market will vary with season and location. However you are likely to be able to find a delicious selection of vegetables, fruit, meat, eggs, bread and cakes, jams, fruit juices and dairy produce. Many times you will see a local chef sourcing fresh products for his or her restaurant. Find out who that chef is and where he or she is employed, then make a reservation. I am fortunate to have this opportunity, provided by the administrator of this web site, to post this message. My intent is to reach out to the culinary community to generate some excitement about the United States Navy’s Adopt a Ship program to support the Navy culinarians with informal culinary education. The Navy has a unique opportunity for all culinarians through the Adopt a Ship program. We are actively seeking professionals from the food service community to work and train along side Culinary Specialists (CS) in the Navy. This voluntary program provides professional culinarians, chefs and cooks the opportunity to spend time shipboard while sharing valuable industry best practices that directly affect the quality of life aboard the ship. Adopt a Ship provides measurable results to all participants. CSs benefit from the on-the-job training, knowledge exchange and work experiences of the visiting culinarian. As culinarians, you have the ability to put your skills to work to support the men and women of the United States Navy in a unique environment, a Naval galley. We also award Continuing Education Hours (CEHs) to both the CSs and participating culinarians to document the value of the training and education. Today's Recipe: Oriental Seafood Rolls Makes 8 servings Ingredients:
2 teaspoons sesame oil 1 teaspoon orange juice 1/2 teaspoon chopped fresh ginger 1/2 teaspoon soy sauce 3/4 pound fresh tuna, cut into 1/2 inch cubes 1 tablespoon peanut oil 3 tablespoons vegetable oil 1/2 cup thinly sliced shiitake mushrooms, stems removed 1/2 cup thinly sliced green and white scallions 1/2 cup fresh bean sprouts 1/4 cup grated carrots 1/2 cup shredded cabbage 1 tablespoon chopped garlic 1/2 tablespoon soy sauce Celery salt and pepper to taste 10 sheets Athens or Apollo fillo dough 1/4 cup butter
Preparation: In medium bowl, combine sesame oil, orange juice, ginger and soy sauce. Mix well and add tuna. Toss to coat, cover and refrigerate for 1 hour. Drain. In large sauté pan over high heat, sauté tuna in peanut oil for 2 to 3 minutes. Remove from pan. In same pan, add vegetable oil and stir-fry remaining ingredients. Remove from heat. Season and combine with tuna. Chill. Prepare 8 small fillo appetizer rolls, according to the directions for Rolls or Strudels on our Shapes & Uses page. Brush with butter and place on cookie sheet. Bake in preheated 350 degree oven for 15 to 20 minutes or until golden brown. Serve hot. This and many great Free Recipes are available on the Athens Foods web pages. Sponsored by  |
