Cynthia's Corner, Cherry Recipes: Dukes, Royals, Mazzards, Cherries and more!

A couple days ago, I was working on my weekly newspaper food column, and I decided to center it on cherries, being that it is basically cherry season. And of course, the fact that I absolutely love cherries of all kind, but especially fresh ones, didn't hurt the story line.

I grew up (as some of my readers might remember) in Ambridge, PA, just a matter of miles down the Ohio River from Pittsburgh. Ambridge was originally settled by members of the Harmony Society religious sect, who came to America for religious freedom.

The Harmonists believed that the Second Coming of Jesus would happen within their lifetime, and because they wanted to be ready and found worthy, they gave up marriage. The men lived apart from the women. But however religious they were, they were known for some of the finest silk and champagne to be found in the Eastern part of our country. They also were excellent cooks, and had orchards throughout the area.

Bacon Blue Cheese Puffs

Ingredients:

8 slices bacon
6 oz. cream cheese, softened
1/2 cup Swiss cheese, shredded
2 Tbsp. mayonnaise
2 Tbsp. blue cheese, crumbled
20 (9" x 14") sheets Athens™ Twin Pack Fillo Dough
1/3 cup butter, melted

In a small skillet, fry bacon until crisp. Drain well and crumble. In a medium mixing bowl combine cream cheese, Swiss cheese, blue cheese, mayonnaise and bacon. Layer 5 sheets of fillo brushing each with melted butter. Cut into eight 3-inch squares. Repeat with remaining fillo. Fill each fillo square with 1 teaspoon of filling. Bring sides up towards center and pinch edges to seal. Brush with butter. Place on a cookie sheet and bake in preheated 375º F oven for 20-25 minutes until golden brown. Serve warm.

Yields 32 appetizers
