Chef of the Month: Frank Stitt

Frank's fondness for humble southern ingredients comes from his own roots in rural Alabama. His culinary journey began in San Francisco and includes such mentors as Alice Waters, Simca Beck and Richard Olney. His travels took him throughout the French countryside working in vineyards in Provence as well as Burgundy and finally back home to foods and traditions that continue to be so much a part of his vision. His first restaurant, Highlands Bar & Grill, opened in 1982. Here, Frank combines consummate French technique and the seasonal flavors of "both south's" — of course the local south, but the south of France as well. Buttery-colored walls donned with vintage posters and subtle lighting are the setting for the intimate dining room while the bar exudes a lively energy with locals and travelers alike seated around the Alabama marble oyster bar. At Highlands, humble southern ingredients such as stone ground grits and country ham meet French sauces and braises creating superb flavors and elegant balance.

Cynthia's Corner: I get tired of cooking fish and chicken...

This may be hard to believe, but every so often, I get in a rut, culinary-wise.

I just seem to be cooking the same things, over and over. I get tired of cooking fish and chicken, chicken and fish and the occasional roast beef. Perhaps it is the changing of the Seasons, with the colder weather, which always bothers me, that is making me feel this way. Winter is coming, and that means heavier, heartier dishes, but somehow, I would rather look through the current water garden catalog and dream of warm days.

I knew my darling husband was getting a little bit tired of quick and easy meals, when I got up Labor Day morning, and found he'd pulled some packages of pork chops from the freezer. PORK? I haven't cooked pork in a long time. I have been avoiding pork chops, ham, sausage etc., because I have been trying to lose weight, he knew that, and yet - PORK?

Culinary School of the Month, California Culinary Academy

Historic California Hall, at 625 Polk Street in downtown San Francisco, is the nerve center of the Academy. Santa Fe Chicken Breasts

Recipe from Smart Chicken


Ingredients:

1 large ripe avocoado
2 ripe tomatoes
Onion salt and garlic salt to taste (about 1 tsp each)
Pepper to taste
2 Tbsp. parsley
Juice of one lime
1 dozen corn tortillas
Red chili powder, to taste (about 2 Tbsp)
Vegetable oil
4 boneless, skinless chicken breasts, halved
Fresh lettuce


Procedure:

Peel avocado and cut into 1" chunks. Place in medium bowl with diced tomatoes, onion, garlic salts, pepper and parsley. Sprinkle with lime juice. Toss gently and refrigerate, covered.

Cut tortillas into 1" wide strips and put into medium bowl. Sprinkle with chili powder and fry in oil about 3-4 minutes until crisp. Remove to paper towels to drain. Using sharp knife, lightly score each chicken breast in a diamond pattern on both sides. Heat chicken in frying pan with about 3-4 Tbsp of the oil from the tortillas.

Cooking Instructions: Cook breasts about 3 minutes each side until browned and cooked through.

Cooking Time: 8-10 minutes

Serving Instructions: Serve on plate with avocado relish on a bed of lettuce.
