"Chef of the Month" Jim Coleman

Jim Coleman is the Host of "Flavors of America" which is not only shown throughout the Philadelphia area every Saturday on WHYY TV-12 (PBS), but is also aired by PBS stations across the nation.

In 1996, Coleman hosted his first television series, Flavors of Philadelphia, which ran for two seasons on Philadelphia's public television. In 1998, Flavors of America hit the national public television with Coleman as host and co-executive producer. Flavors now airs in 40 million homes across the country.

Cynthia's Corner: I am adult enough now to enjoy fruitcakes!

November. Leaves turning, darkness seems to come earlier, weather most certainly is worse and so one looks for things to brighten the day.

The coming holidays can be seen as giving one something to look forward to with pleasure or less than pleasure. The mail is filled with catalogs of every description, and holiday editions of various magazines start to appear. You spend precious time making lists and checking them three or four times.

Well, I like to stop, and just sit in my Dad's old recliner with a cup of coffee or peppermint tea, and go through the catalog pages and magazines, see what the culinary powers-that-be declare to be the in thing for this holiday season, check out recipes, crafts and decorations.

The desserts always catch my eye. They are more spectacular at the holidays than any other time of year. Clouds of whipped cream, white or dark chocolate, nuts of every type - a wonderful excess we rarely accept the rest of the time. Glorious cakes, pies, tarts and torts, cookies and fruitcakes fill the pages.

Fruitcakes? Oh, c'mon...one must be joking, right? As author and humorist Dave Barry once said, "Fruitcakes make ideal gifts because the Postal Service has been unable to find a way to damage them." For the rest of the story:

Thanksgiving Pumpkin Creme Brulée

Yield: 3-1/4 qt. batter (7 lb. 10 oz.)
Serves: 40 (3 oz.) servings
Approximate Cost Per Serving: $0.21

Ingredients:

2-1/2 cups Light Brown Sugar
2 cups egg yolks
26 oz. Libby's 100% Pure Pumpkin Puree (1/4 #10 cn)
2 Tbsp. Allspice
1/2 cup Orange Liquor
3 cups Carnation Evaporated Milk (2 cns)
1 qt. Heavy Whipping Cream
1-1/2 cups Light Brown Sugar


Procedure:

In a large bowl, combine sugar, egg yolks, Pumpkin, allspice and liquor with a wire whip.

Separately, in a 4 qt. sauce pot, heat Evaporated Milk and cream to boiling over medium high heat. Gradually pour the liquid into the pumpkin mixture, stirring constantly with a wire whip. Mix well.

Pour 3 oz. mixture into ramekins. Place ramekins in full size steam table pans. Cover with saran wrap.

In a preheated combi oven (setting steam & 260°F heat), poach the custard until firm, approximately 18 minutes. Chill.

Before serving, dust with light brown sugar and caramelize under broiler.
