"Chef of the Month" Thierry Blouet

The founder of Café des Artistes in Puerto Vallarta, one of the best restaurants in the world, Thierry Blouet was awarded the rank of Maître Cuisinier in France in February 2000.

This title distinguishes him as one of an exclusive group of culinary professionals and ambassador of French cuisine throughout the world. He is also a member of the Academie Culinaire de France.

Cynthia's Corner: Apples, apples everywhere

"An apple a day keeps the doctor away" (Unless, of course, you are referring to an optometrist, in which case, I suppose, you should really be eating carrots instead of apples) Be that as it may, apples are good for us all.

Actually, archeologists have found evidence that humans have been enjoying apples since at least 6500 BC. The pilgrims planted the first United States apple trees in the Massachusetts Bay Colony. However, it wasn't until 1730 that the first apple nursery was opened in Flushing, New York and it is safe to say that we have had a love affair with them ever since.

A Taste of Puerto Vallarta

Puerto Vallarta is the second most visited resort in Mexico and for many a good reason. The tropical forests and volcanic slopes form a perfect backdrop for the gorgeous Bay of Banderas. The bay is the largest and deepest bay in the country and home to migrating whales and teems of aquatic life.

The town, although home to over 150,000 residents retains it's quaint Mexican charm, with colonial, Mediterranean, whitewashed buildings and red tile roofs. In the middle of the old town is the landmark Church of Guadalupe, with it's brick tower topped with a huge crown like the one worn by Mexico's 18th century Empress Corlota. The streets are still cobblestone and the tropical trees and flowers that flourish there are a sight to behold. But there is another scent in the air, the one we came for...Food!

Today's Recipe is provided

Lobster Bisque

Yield 1 gallon
Serves 16 - 8 oz. servings

Ingredients:

3/4 cup (6 oz.) Margarine or Butter
1-1/4 cup (6 oz.) Flour
3 qt. water, hot
1/2 cup (5 oz.) Minor's ® Lobster Base
dash of ground red pepper
1 qt. Cream or Half and Half
2/3 cup Pale Dry Sherry

Procedure:

In an 8 qt. sauce pot over medium high heat, melt margarine or butter.

Blend in flour.

Cook 2-3 minutes, stirring constantly.

Add water, Lobster Base and red pepper. Heat to boiling, stirring constantly.

Reduce heat and gently boil 10 minutes, stirring occasionally.

Add cream and sherry, mixing well. Heat to a gentle boil, stirring frequently.

Optional: Add 15 oz. cooked lobster meat cut into 1/4 inch pieces
