This month and especially today, we honor Julia Child on our site and in our hearts. Today Julia Child turns 90 years young! 1,326 of our visitors signed Julia's Birthday Card in our "Chef of the Month" feature in the last two weeks. We will have the card printed and bound with a cover and send it to her new home in California. The Birthday card is 126 pages long!

  Top 10 Sous Chefs in the U.S. Honored at Second Annual Bertolli Sous Chef Awards

Bertolli Olive Oil named Eric Klein of Spago, Beverly Hills, CA, the Judges’ Choice Award winner in its Second Annual Bertolli Sous Chef Awards, a showcase of the greatest Sous Chefs in the nation.

Emcee and Celebrity Chef Martin Yan also announced two other categorical winners in the competition. Laurence Gottlieb of The Inn at Little Washington, Washington, VA, was awarded both the Public’s Choice Award and Peer Review Award.

"We created the Bertolli Sous Chef Awards to celebrate the unsung heroes of the culinary world," said Paul Barrett, communications manager, Bertolli USA. "Tonight we celebrated our strong belief that behind every great Executive Chef, there is a great Sous Chef. Bertolli would like to congratulate this elite group of chefs for a job well done. They all worked very hard in preparation for this evening, illustrating the passion and dedication they each have for this industry.

Baklava

Ingredients

1-1/2 pounds of walnuts, chopped
1/2 cup of granulated sugar
1/2 teaspoon cinnamon
1/8 teaspoon ground cloves
40 sheets Athens® or Apollo® fillo dough
1 cup butter, melted


Combine walnuts, sugar, cinnamon and cloves.

Brush a 12" x 17" baking pan with butter. Place 10 buttered fillo sheets on bottom. Sprinkle with 1/3 of walnut mixture. Place 7 more buttered fillo sheets on top, then 1/3 more walnut mixture, top with another 7 buttered fillo sheets and rest of walnuts. Finish baklava with another 16 fillo sheets and brush with remaining butter.

With a very sharp knife, score fillo into 1-1/2" diamonds or squares. Bake in preheated 350°F oven for 45-60 minutes or until golden brown. Cool slightly. Pour warm syrup evenly over baklava.

Makes 88 pieces

Baklava Syrup

Ingredients

2 cups granulated sugar
1 cup honey
2 cups water
1 lemon peel

Bring all ingredients to a boil. Simmer for 10 minutes. Strain and cool slightly. Pour warm syrup over baklava. Cool completely, cut and serve.
