The remarkable success story of Tammy Craddock
Tammy Craddock, a former schoolteacher and stay-at-home mom, began her cheesecake career as a home-based baker in Columbus, Mississippi in 1983. Having been raised on an Illinois farm, she was not only familiar with home baking, but had also developed a special skill for it. While raising her two children in Columbus, she began baking breads and desserts for her friends and then also began to sell them. She soon began making her prized cheesecakes for four restaurants in the area and then in 1997 she was awarded a contract with Amtrak to serve four flavors of cheesecake on the Crescent Line from New York to New Orleans. The mixers and blenders got bigger, but she still made every cheesecake by hand. In May of this year, Amtrak awarded Tammy Craddock and Jubilations Cheesecake a contract to provide her cheesecakes on it's entire route system in the U.S. Initial estimates suggest that they will serve 10,000 slices per week. Chilled Rigatoni Salad 4-6 servings
1 clove garlic, halved 1-1/2 to 2 cups cooked rigatoni 1 can (14 ounces) artichoke hearts, drained and cut into bite size pieces 1/2 cup chopped sweet red pepper or green pepper 1/2 cup cubed mozzarella cheese, 1/2-inch cubes 1 medium carrot, cut into julienne strips 1/4 cup sliced pitted black olives 2 ounces salami, cut into thin strips 1/4 cup CRISCO Oil 2 tablespoons white wine vinegar 1 tablespoon olive oil 1/2 teaspoon salt 1/2 teaspoon sugar 1/2 teaspoon dry mustard 1/4 to 1/2 teaspoon dried oregano leaves 1/4 to 1/2 teaspoon dried basil leaves
Rub inside of medium serving bowl with cut sides of garlic. Discard garlic. Mix rigatoni, artichoke hearts, red pepper, mozzarella cheese, carrot, olives and salami in prepared bowl Blend remaining ingredients in small bowl. Pour over rigatoni mixture. Toss to coat. Cover and refrigerate 2 to 3 hours. Stir before serving. Recipe from www.crisco.com |
