Although well-known as a "New American" chef, and considered among that cuisine’s best practitioners, Nish was never completely at ease with the title. True, his food spoke of America, but even more, it spoke of something closer to home. It said "New York." And now Nish, too, has decided to say "New York." Both in recognition of what his cooking has always been, and, even more, as a tribute to the city that inspires him, Nish will no longer define his food as "New American Cuisine," but rather as "New York City Cuisine." The Winemaking Home Page inducted into the Chef2Chef "Hall of Fame" The Winemaking Home Page is the first of our TOP 100 Wine Sites to be inducted into our "Hall of Fame". Not an easy task to accomplish, as they must reach a total voting score of 50,000 to reach the goal. We would like to invite you to visit their site. Trouble free Mac and Cheese Recipe from Crisco.com (4 to 6 servings) - 1 package (7 ounces) elbow macaroni
- 1/4 cup Butter Flavor CRISCO
- 3 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon onion powder
- 1/4 teaspoon dry mustard
- 1/4 teaspoon curry powder, optional
- 1/8 teaspoon pepper
- 1-2/3 cups milk
- 2 cups shredded Cheddar cheese (about 8 ounces)
Topping: - 1/4 cup Butter Flavor CRISCO, melted
- 2/3 cup fine dry bread crumbs (unseasoned)
- 1 teaspoon dried parsley flakes
Preheat oven to 350°F. Cook macaroni as directed on package. Drain. Transfer to 2-quart casserole. Set aside. In small saucepan melt Butter Flavor Crisco. Remove from heat. Stir in flour, salt, onion powder, dry mustard, curry powder and pepper. Gradually blend in milk. Cook and stir over medium heat until mixture thickens and bubbles. Stir in cheese until smooth. Remove from heat. Stir into macaroni. For topping, combine melted Butter Flavor Crisco, bread crumbs and parsley flakes. Sprinkle over macaroni and cheese. Bake at 350°F for 20 to 25 minutes, or until bubbly. Spicy Macaroni and Cheese: Follow the recipe above After cooking macaroni, melt 1 tablespoon Butter Flavor Crisco in small skillet. Add 1/3 cup chopped green pepper and 1/4 cup chopped onion. Cook and stir over medium heat until tender. Add to macaroni. Drain 1 can (16 ounces) whole tomatoes. Chop and add to macaroni. Continue as directed, substituting 1/2 teaspoon chili powder and 1/8 teaspoon ground cumin for dry mustard, onion powder and curry. Recipe from www.crisco.com |
