The first time I heard James Taylor sing "Going to Carolina in My Mind", I cried. I was so homesick. Even though I had left South Carolina when I was very young, I spent weeks outside Myrtle Beach every summer with my Grandmother Mitchell and family -- my "Mammy", as she preferred to be called. The family included my Granddaddy Mitchell, and various aunts, uncles and cousins from Sumter and Atlanta. I missed my family, I missed the beach, I missed everything about South Carolina.

I came home from my food and mystery book club meeting a couple months ago, and Jonathan, our youngest son, was on the front porch, proud as he could be, because he and his Dad had just transposed a song, and he wanted to sing it for me. You guessed it - James' Carolina music filled the porch and yard as we all harmonized.

7. Recipe: SAN ANTONIO TACO SALAD

SAN ANTONIO TACO SALAD

4 to 6 servings

CRISCO Oil for deep frying
4 to 6 inch flour tortillas
1 pound ground beef or ground turkey
1/4 cup chopped onion
1 can (15-1/2 ounces) kidney beans, rinsed and drained
1-1/2 teaspoons chili powder
1 teaspoon cumin
1/2 teaspoon salt
1/8 teaspoon pepper
1/3 cup taco sauce
4 to 6 cups shredded iceberg lettuce
1 cup shredded Cheddar cheese (4 ounces)

Dairy sour cream, chopped tomato, sliced black olives and additional taco sauce as garnish, if desired

Heat 3 inches Crisco Oil to 365°F in deep fryer or deep saucepan. Place one tortilla in oil. Let float 5 seconds. Press center of tortilla into oil with metal ladle to form bowl. Fry 1 or 2 minutes or until golden brown. Drain on paper towel. Repeat with remaining tortillas.

Brown ground meat and onion in electric skillet at 365°F or in large heavy skillet on medium-high heat. Drain. Add beans, chili powder, cumin, salt and pepper. Cook on medium heat, stirring constantly, 5 minutes. Stir in 1/3 cup taco sauce.

Divide lettuce equally between fried tortillas. Top with meat mixture. Sprinkle with cheese. Top with desired garnishes.
