Louisiana Cookin’ July/August 2006 - On Sale Now!
August means it’s time for Louisiana Cookin’s annual Chefs to Watch issue! Through nominations given by food industry leaders and anonymous restaurant visits, we choose and honor five Louisiana up-and-coming chefs and include outstanding samples of their culinary genius. They are: Aaron Burgau, Bank Café, New Orleans; Allison Vines-Rushing and Slade Rushing, The Longbranch, Abita Springs; Donald Link, Herbsaint, New Orleans and Donald Thompson, White Oak Plantation, Baton Rouge.
A great way to beat the heat this summer is with chilled soups, and we feature everything from Creole gazpacho with shrimp to chocolate-covered strawberry soup. Food columnist and cookbook author Marcelle Bienvenu explains how to entertain in the cool of the evening with fresh salads and chilled desserts. For outdoor summer grilling, check out what Louisiana chefs recommend when incorporating rotisseries and other specialized grill techniques. If staying inside is more your idea of cool, we spotlight several cooking schools, from New Orleans to Lafayette. And speaking of Lafayette, Louisiana Cookin’ visits The Blue Dog Café, a restaurant offering tantalizing cuisine amidst the canine artwork of George Rodrigue.
If that’s not enough, we have food news and gossip, light and easy recipes, traditional Louisiana recipes, garden herbs, book reviews and more in Louisiana Cookin’ magazine.
