Cantare Launches Convenient Sliced Mozzarella

February 1, 2006, San Diego, CA: Cantare Foods, Inc of San Diego, winner of many coveted awards at the prestigious World Cheese Championships, recently launched a new delight to tickle your taste buds and save on preparation time. Medaglione Fresca Mozzarella, a pre-sliced fresh Mozzarella medallion, is made from their formula of Fresh Mozzarella, the Gold Medal Winner at the 2002/2004 World Cheese Championships.

time spent on trying to slice it -- still a tough task for even the most experienced cheese cutter! Cantare Foods Inc. has stuck to its award winning formula and old-world traditional cheese making methods. “We make our products slower, in smaller batches, often by hand, and with individual care by our speciallyselected craftsman,” says Robert Fischer, Cantare’s Founder and Chairman. “We have been able to considerably extend the shelf life of our fresh products, but we have not and will not sacrifice texture and taste or quality.”

Because of Cantare’s traditional cheese-making methods, Medaglione Fresca Mozzarella enjoys a slightly longer shelf life. As the curd is pressed and molded into slices, they are able to preserve shelf-life to 40 days because of the strong skin, which keeps water out and prevents migration. Cantare’s Italian cheese makers use lactic acid, a natural milk by-product, to produce their mozzarella. This process retains moisture and preserves taste and texture. Most US producers commonly use vinegar as an acidifier, which leaves an unpleasant flavor as the cheese ages. Cantare uses no vinegar in its cheese making, since in Italy, vinegar is used in salads, not in making fresh mozzarella!

Medaglione Fresca Mozzarella has several key attributes, making it impossible to be ignored by domestic or commercial chefs: It saves time, labor and valuable kitchen space; is convenient and ready to use; is one ounce portion controlled; ensures presentation consistency (slices perfectly every time); is an all-natural product with no preservatives or rBST; is made from high protein and high butterfat milk; contains a lactic acid acidifier with no strong cheesy flavor; has a clean milk flavor (“Fior Di Latte”); has perfect skin for long lasting taste and

Because Medaglione Fresca Mozzarella is already sliced, it is ideal for making panini sandwiches, Caprese salads, pizzas, hors d’oevres trays or crostini toppings. It is also delicious when breaded, deep fried and served with a spicy marinara.
