As we all know, Hurricane Katrina has devastated much of all it passed through. The city of New Orleans lays in shambles and probably will never be the same again.
I work with a reputable writer/historian who is currently writing a book on the hurricane and post hurricane response.
Something that has remained incredibly important to me is including a history of the food of New Orleans. We all know that some amazing dishes and influences on American cooking have come out of New Orleans. These same dishes play a direct role on our history. It is important for us to remind the rest of the culinary world of what may be lost because of this disaster.
I have a major publishing firm interested in publishing a non profit cook book of collected recipes from New Orleans. I want to talk to survivors, publish their stories and their favorite recipes. While currently volunteering in the Astrodome, I have been looking for anyone who may be interested in this opportunity.
