Hello Recipe Club,

Most folks we know like to ring in the new year with a cocktail or two. Today I have four cocktail recipes for you to enjoy. Two of them include champagne which is a traditional beverage of choice on New Year's Eve. I can drink one glass of champagne, two gives me a headache, but mixed into a cocktail with other ingredients, I am usually fine. Remember to drink responsibly and be attentive to your guests.

Special Champagne Cocktail for Eight

Ingredients:

1 pint fresh raspberries
2 tablespoons sugar
1/2 cup plus 2 teaspoons raspberry liqueur
1/4 cup cognac or other brandy
8 sugar cubes
1 (750 ml) bottle chilled brut champagne
fresh raspberries for garnish
lemon peel strips for garnish

Preparation:

Combine raspberries and 2 tablespoons sugar in medium bowl. Mash berries lightly with fork. Let stand 15 minutes. Mix in liqueur and brandy. Pour into jar. Cover and let stand in refrigerator overnight. Strain raspberry mixture, pressing on solids with spoon to extract as much liquid as possible.

Place one sugar cube in each of eight 6-ounce champagne flutes. Pour 2 tablespoons raspberry mixture over each sugar cube. Pour champagne over to fill glasses. Garnish each with raspberries and lemon peel.

Planter's Punch

Makes 1 serving

Ingredients:

2 teaspoons sugar
2 ounces orange juice
dash of grenadine
1-1/4 ounce of white rum
splash of dark rum
orange slices for garnish
maraschino cherries for garnish

Preparation:

Put sugar into a container and dissolve with orange juice and grenadine. Add white rum and some shaved ice and shake well until frothy. Strain into a tall glass over fresh shaved ice. Float dark rum on top. Garnish with orange slice and a cherry

The Manhattan Cocktail

Makes 1 serving

Ingredients:

2 shots rye whiskey, or Bourbon
1 shot vermouth, sweet
4 splashes Angostura bitters
1/2 teaspoon maraschino cherry juice, or to taste

Preparation:

Stir the ingredients with ice and strain into a Martini glass. Garnish with a cherry.

Champagne Martini for Two

Ingredients:

3 ounces vodka
chilled champagne
lemon twist for garnish

Preparation:

Pour chilled vodka into two chilled martini glasses, Top with champagne. Garnish with a lemon twist.
