Serves 8 11/2 pounds stewing beef 1/4 pound salt pork, diced 1 tablespoon oil 2 cloves garlic, minced 1 onion, chopped 1 green pepper, chopped 1/2 teaspoon pepper 3 sweet potatoes, cubed 1 tomato, chopped 3 cups fresh spinach, stems removed 1 cup kale, chopped 1 teaspoon hot pepper sauce 8 cups water Procedure: In a large skillet, brown the beef and salt pork in oil over medium-high heat. Add garlic, onion, green pepper, pepper and cook over medium-high heat for an additional 3 minutes. Transfer the mixture to the slow cooker and add the potatoes, tomatoes, spinach, kale, hot pepper sauce, and water. Cook on LOW for 8 to 10 hours, or on HIGH for 4 to 5 hours. Caribbean Chicken While some dishes remind us of their origins, others, such as this one, transport us there. Chicken, vegetables, and spices in coconut milk capture all things Caribbean. Serves 4 3 pounds chicken pieces (mixture of dark and white meat) 1 tablespoon oil 4 potatoes, cubed 3 tomatoes, chopped 1 onion, chopped 1 green pepper, chopped 1 clove garlic, minced 1 tablespoon brown sugar 1 teaspoon ground ginger 1 teaspoon pepper 1/4 teaspoon cayenne 1/4 teaspoon dried thyme 1/4 teaspoon salt 1/2 cup chicken broth 11/2cups coconut milk To reduce the fat, remove the skin from the dark meat. In a skillet, brown the chicken in oil over medium-high heat. Using a slotted spoon, transfer the chicken to the slow cooker and add the potatoes and tomatoes. Add the onion, green pepper, garlic, brown sugar, ginger, pepper, cayenne, thyme and salt to the skillet and cook over medium-high heat for 3 minutes. Stir the broth into the skillet, then transfer the mixture to the slow cooker. Cook on LOW for 6 to 8 hours, or on HIGH for 3 to 4 hours. Serves 4 4 ripe bananas, sliced lengthwise and halved 2/3 cup orange juice 1 tablespoon honey 1 piece crystallized ginger, chopped 2 teaspoons shredded unsweetened coconut 1/2 teaspoon ground cinnamon Combine all the ingredients in the slow cooker.
