Thank you all for the hundreds of wonderful notes this week about our Recipe Club and how much you enjoyed Kent's story and recipes. Feel free to memorize it and tell your friends. Now picture yourself out by a campfire with a big ole cup of Cowboy Coffee. The smells of biscuits, chicken casserole and maybe some bread pudding are coming from the Dutch ovens. Now here comes Kent to tell you this poem… Frugal Cowboy Meal By Kent Rollins This ain't no doggone "hardee's" And it ain't no "Mick-eDee's" There ain't no drive-up window And a menu you want see This is just an ole Chuckwagon That's been through hell and back There want be any happy meals Cause my food want fit in a sack We don't give no little toy With the meal that you receive But we'll pass out the Rolaids There the only thing that's free We ain't got no purdy waitress To bring out your gourmet meal Just an ole wore out camp cook Who's nasty, mean and ill 'Cause he's been up early, a fixin Your meal it didn't come pre-cooked And there ain't no telling what fell in When you weren't there to look But my coffee's always hot And you wont find no preservatives here And the meat is s always 100% pure Mostly coyote, beef or deer Now don't go getting squeamish Cause we ain't killed nobody yet And you'll get a free coupon For a free visit to the vet So, get up here in line, folks For a Frugal Cowboy Meal Before ole cookie starts tenderizing With them big ole wagon wheels! Here is a story I found that was written by Linda Brantner about Kent Rollins. I'd like to share it with you. If I were to try to describe Kent to someone who didn't know him, I would tell you he's an average height guy, wears an old cowboy hat that belonged to his dear departed Daddy, and wears it with pride and respect. Walks like he's been on a horse most of his life workin' cattle. He'll be dressed up neat in a long-sleeved plain colored western shirt and jeans. Nothin' fancy. When you get within hearin' distance you'll hear an Oklahoma accent, then see a reddish cowboy mustache, and an ornery gin. He'll say "Howdy" and you'll be lookin' into eyes that take you straight down into his soul. Anyone who meets him loves him, from kids to grandparents, you just can't help but be drawn to him. He makes you feel like family. You would be hard pressed to find a more authentic cowboy than Kent outside of the words printed in our American Western History Books. True to the bone, Kent carries with him a heritage of the old western traditions that were born into his blood. Being raised with them, they are a part of his daily life and he doesn't know any other way to be, it's just natural for him. Anyone around him knows right down to their soul that they are standin' next to the real thing and that, my friends, is a real honor. Kent lives the life of an American Cowboy, not just when he's on stage or at an event. Kent is a cowboy; one of the very few left in this Country today. Good friend, strong family man and true to God and Country. If he tells you somethin', it's true. If you make a business deal, he shakes your hand and there's no need for paperwork. I honestly think that Kent would walk if he had to in order to keep his word of being at a performance. Not only will Kent do what you have hired him to do, but he'll help out anywhere he sees that you need it. He won't say a word, he'll just roll up his sleeves and get the job done. Over the years, I have gotten to know Kent, but nothing has changed from my first impression of him. He's a true cowboy and a gentleman. When you meet him, you have an overwhelming feeling of ease, you just know that you are standing next to one of the purest, kindest, most sincere people you have ever met in your life. Hamburger 1 chopped green pepper 1/2 pkg. Chili mix 8 oz can tomato sauce 1/2 cup brown sugar 1/2 tsp. salt 1 chopped onion 1/2 tsp. Chili powder 1/4 cup catsup 1 can Pork & Beans Cook hamburger meat, green pepper and onion until tender. Then add rest of ingredients. Mix well and pour into greased 12 inch Dutch oven. In a small pot, fry the bacon after you cut it into 1-inch slices, then add the green beans back in. Add just enough water to cover, salt and pepper to taste. Add pinch of garlic and let simmer till green beans are tender. You can add cooked new potatoes if you like. -------------------------------------------------- Chicken and Dressing 1 chicken, cooked, boned and cut up 1 box cornbread dressing mix 1 stick oleo 3/4 cup chopped onion 1/2 cup diced celery 3/4 tsp. salt 1-1/2 cups chicken broth 1/2 cup mayonnaise 1 cup milk 2 eggs, beaten Boil and debone chicken, tear and cut up into small pieces. Reserve the broth and set aside. Mix seasoning packet from dressing mix with 1-1/2 cups of the broth. Add this to the dressing mix. Sauté onion and celery in oleo and add to crumbs mixture along with remaining ingredient. Put 1/2 of the dressing in a large casserole dish; layer all of the chicken over that. Then pour the remaining dressing over the chicken. Cover and refrigerate overnight. When ready to cook spread 1 can of cream of chicken soup over the casserole. Combine all ingredients; mixture should be very moist, but not soupy. Pour into buttered 9 X 12 baking dish. Bake 1 hour and 15 minutes until top is golden brown. Serve warm with sauce.
