Thursday:

Salad with Oriental Dressing
Orange-Ginger Broccoli with Noodles
Beef with Snow Peas
Five Spice Cookies

Oriental Style Dressing

   4 tablespoons soy sauce
   1 teaspoon honey
   1 tablespoon apple cider vinegar
   3 tablespoons peanut oil
   1 tablespoons sesame oil
   1 tablespoon ground ginger

    Mix all ingredients in a shaker jar. Secure cap tightly and shake just prior to use.

ORANGE-GINGER BROCCOLI AND NOODLES

Sauce:

2 T. frozen orange juice concentrate, thawed
1 T. *rice vinegar
2 t. soy sauce
1/2 t. grated fresh gingerroot or 1/8 t. ginger
1/4 t. garlic powder

Noodles:

4 oz. dried Chinese noodles or uncooked vermicelli
2 c. fresh broccoli florets and stems (cut stems into 1x1/2-inch pieces)
1 c. julienne-cut carrots (2x1/4x1/4 inches)

In small bowl, combine all sauce ingredients; mix well. Set aside. In large saucepan, bring 8 cups water to boil over high heat. Add noodles, return to a boil. Reduce heat to medium; cook Chinese noodles for 2 minutes or vermicelli for 5 minutes. Add broccoli and carrots to noodles; cook 3 minutes, stirring occasionally. Drain well;return to saucepan. Add sauce; toss gently.
Serve immediately. 2 (1 3/4c.) servings.

TIP:  If rice vinegar is unavailable, use 1 1/2 t. cider vinegar plus 1 T. water.

Beef with Snow Peas

3 tablespoons soy sauce
2 tablespoons rice wine
1 tablespoon brown sugar
1/2 teaspoon cornstarch
1 tablespoon vegetable oil
1 tablespoon minced fresh gingerroot
1 tablespoon minced garlic
1 pound beef round steak, cut into thin strips
8 ounces snow peas

Directions

In a small bowl, combine the soy sauce, rice wine, brown sugar and cornstarch. Set aside.

Heat oil in a wok or skillet over medium high heat. Stir-fry ginger and garlic for 30 seconds. Add the steak and stir-fry for 2 minutes or until evenly browned. Add the snow peas and stir-fry for an additional 3 minutes. Add the soy sauce mixture, bring to a boil, stirring constantly. Lower heat and simmer until the sauce is thick and smooth. Serve immediately.

Chinese Five Spice Oatmeal Cookies

2 c. quick cooking rolled oats
1 1/2 c. flour
1 c. coarsely ground almonds
1 1/2 tsp. Chinese five spice
1 tsp. each baking powder and cinnamon
1/2 tsp. salt
1 c. butter or margarine
1 c. sugar
1 c. packed brown sugar
2 large eggs
2 1/2 tsp. vanilla

Combine oats, flour, ground almonds, spices, baking powder and salt; set aside.

In a large bowl, using a mixer, cream butter and both sugars until smooth. Add eggs and vanilla, beat until well mixed. Add flour mixture, beat until blended.

On lightly greased cookie sheet, drop batter in mounded tablespoons, about 1 1/2" apart. Bake at 350F, 12-15 minutes. Cool on a rack. Store in covered container. Makes about 3 dozen.
